What is your most memorable wedding?
There are so many to choose from as many of the couples become firm friends! Our biggest challenge must be our 7 tier mini Trinket Box display. It sto over 3 feet tall, with 112 individual mini cakes and took a massive 80 hours to make over just 5 days!

What about your business are you most proud of?
My reputation has been gained through years of careful understanding of my couples. The reviews I have had over the years have made me realise I need to keep my unique approach to designing wedding cakes with the involvement of the couple. I do this by holding consultations at the couples home or venue and a special tasting session of my home baked cakes in a range of flavours. My recipes are most guarded secret!

Be open minded about everything!
Describe your typical process with a couple.
I meet many couples through wedding fairs or recommendations from venues I'm recommended by. My general approach is to arrange a consultation and tasting session either at the couples home, wedding venue, local hotel or even a pub! I bring along samples for them to try of the flavours they would like; the most popular being Baileys, Lemon Drizzle, Chocolate Truffle, Vanilla and Strawberry Passion!
During the consultation we look at pictures, my portfolio a d discuss the style of their wedding any any ideas they may have. Parents are also welcome if they want!
What is your signature cake?
My Mini Cake designs are my signature element as they are so easy to personalise. They are a lot of work but look absolutely stunning in any venue from a small community hall to a grand hotel; and believe me they have been in both!!
What is the most original creation you have baked for a wedding?
All of my cakes are made from scratch and the recipes are all mine so they are all original! My current favourite design is known as "Bloomin Delicious", it is split in half vertically and has masses of fresh flowers through the centre, Im the only one who makes this and everyone loves it as its designed to match each brides theme.
Describe how you got into making wedding cakes.
My interest started with novelty cakes for my own children some 20 years ago! I still adore the novelty wedding cakes, the cow-themed cakes, pumpkin cakes and lego cakes are fabulously fun to make! My best friend got into cake making cakes many years before I did and after the sad passing of my Dad she encouraged my to launch the business and I've never looked back!
What would be your show stopper in the Great British Bake Off?
Definatley one of my special recipe cakes such as the Lime & Passionfruit cake, Gin & Lemon or Salted Caramel Latte! My unique recipe Bailey's Cake always goes down a storm too!
