What is your most memorable wedding?
It has to be my baby sisters. Obviously she wasn't happy with just one cake and instead requested a 4 tier semi naked cake finished with summer berries to sit in amongst a mammoth dessert table filled with more cakes and treats such as coconut ice, cupcakes, fondant fancies and truffles. The whole wedding was a literary theme so the cake table was based around Alice in Wonderland with cute touches, signage and a whimsical theme. It did mean I was busy baking whilst everyone was relaxing and being pampered but it was amazing to create something special for her.
What is your signature cake?
Semi naked cakes decorated with fresh flowers. For me it's all about the cake so nothing else is needed.
Describe how you got into making wedding cakes.
I have always baked cakes and decided I wanted to learn sugar craft and how to create delicate icing decorations. From there I began making wedding cakes and over the years I have developed a bit of a speciality for naked and buttercream cakes.
What would be your show stopper in the Great British Bake Off?
Definitely a summery towering sponge cake and I'd choose my favourite lemon drizzle, raspberry and white chocolate and a strawberry cheesecake flavoured sponge. I'd decorate with a mixture of ruffled buttercream and semi naked tiers before finishing with some of my favourite blooms, fresh figs and strawberries and edible gold leaf for a touch of sparkle.
