What is your most memorable wedding?
A New Years Eve wedding amongst family and friends. The cake was chocolate, covered in dark chocolate ganache with a white chocolate drizzle and decorated with physallis, fairy lights and burnt orange ribbon. A really beautiful wedding.

What about your business are you most proud of?
Our ability to adapt and learn with every cake and the fact that we can often sense what is needed even when it is hard for the couple to explain.
What is your No. 1 wedding planning tip for couples?
Listen to each other.
Describe your typical process with a couple.
I will encourage the couple to talk about their wedding - colours, themes, ideas and dreams; and about themselves - their likes and dislikes, their personalities and hopes for the day. Only then will we talk about cake - size, flavour, whether dessert or just cake, decoration, stand, ribbons, delivery and costs. Then we decide on a design together. Tasting can be pre-arranged.
What is your signature cake?
A cake which reflects the person it is made for. So much more than just cake.
What is the most original creation you have baked for a wedding?
The bottom layer had mackerel swimming round it to represent the groom. The middle layer was covered in buttons to reflect the handmade bridesmaid bouquets and the top layer had a, locally made, topper of the bride and groom, their son and their dog and cat plus a copy of the brides bouquet in wired sugar flowers. The base had a brown sugar and almond beach with hearts and initials etched into it (copying the invitations) and finally models of George and Peppa Pig sitting on the sand.
I have also, in the past, had a bride and groom come to my kitchen and make models of each other in icing which took pride of place on top of the cake.
Describe how you got into making wedding cakes.
I admired my sisters wedding cake and spent time with the maker learning the art of wired sugar flowers. I have developed a long way in the twenty years since then.
