What is your most memorable wedding?
A large Disney castle.
Describe your style in 5 adjectives.
I wouldn't say I have a style as such, but I like things finished off properly. I am quite versatile in designs so I have an eclectic portfolio, although I do specialise in stacked cakes.
What about your business are you most proud of?
Achieving editorial in Wedding and flowers magazine. Being chosen to make the golfer Lee Westwood's wedding cake.
What is your No. 1 wedding planning tip for couples?
Book the date with suppliers early on and they will advise you when the details have to be decided on.
What is your favourite personal touch you have seen at a wedding?
In 30 years I have seen and done many different things.
Describe your typical process with a couple.
I like to discuss how the bridal couple see the cake in their minds, look through my portfolio and sketch a design whilst tasting cake,

My To Have and To Hold Cake.
What is the most original creation you have baked for a wedding?
All my cakes are original so I cannot choose.
Describe how you got into making wedding cakes.
I was encouraged by my mum to do it whilst at college training to be a chef.
Whilst at college training to be a chef, I took the opportunity to do City and Guilds in cake decorating at night class at the same time.
What would be your show stopper in the Great British Bake Off?
No idea because as a professional I can't enter it.
