What is your most memorable wedding?
My most memorable wedding was Zöe & Aarons wedding from summer 2017. I had to assemble it at their stunning venue of Cabra Castle and then arrange all the fresh flowers to cascade from the top and side of the cake. The final cake stood over 3ft tall in champagne & rose gold tones, it towered over me and was just so stunning...perfect for the couple & their venue.

Having built such an amazing following for my cake designs that I am invited to go and teach my style of cakes internationally.
What is your No. 1 wedding planning tip for couples?
Don't try to please everyone...it's your wedding cake so choose a design and flavours that you love.
Describe your typical process with a couple.
After initial contact we would then try to arrange a consultation so that they can meet me, wecan chat through their cake needs, create an initial design and taste some samples. Sometimes it's not possible to meet with couples at an early stage, so I can do all the design process through emails or Facebook. Samples can also be posted within Uk & Ireland.
Once a design is finalised contact is not required until within month before wedding when final flavour choices are confirmed and cake table design is decided on. Though throughout the whole process I am there to guide each couple.
What is your signature cake?
My signature flavours would have to be White Chocolate & Raspberry and Malteaser & Carmel Chocolate Cake
What is the most original creation you have baked for a wedding?
A cake carved & decorated to look like a raw steak presented on a butchers block complete with bride & groom figures.
Describe how you got into making wedding cakes.
I made my eldest son's first birthday cake back in 2010. Friends of mine had just got engaged and asked me to make their cake for 2yrs later. (If you had seen that first birthday cake I would not have wanted to book me). With lots of practice I made their cake, the first of many more to follow as I had fallen in love with my hobby which turned into my job & absolutely my passion!
What would be your show stopper in the Great British Bake Off?
Probably my watercolour rainbow unicorn cake...I love making these and the first one I did went viral on Facebook & Instagram and was featured on the cover of Aug 2017 Cake Masters Magazine as their featured tutorial.
