What is your most memorable wedding?
Delivering a perfect, five course meal from a catering tent in a flooded valley in Warwickshire in 2012. We all wore wellies, there was 3 inches of liquid mud across the marquee, the food was perfect, we kept smiling and they LOVED it.
Describe your style in 5 adjectives.
Relaxed but exacting. Generous. Positive (and 'can do'). Organised.
What about your business are you most proud of?
Starting with nothing in an industry we knew nothing about and becoming a force to be reckoned with.
What is your #1 wedding planning tip for couples?
Find suppliers that hate 'hidden extras' as much as you do (us in other words!).
What is your favourite personal touch you have seen at a wedding?
Wellington Boots as flower vases.
Describe your typical process with a couple.
Establish ball-park match. Meet and talk fave food. Agree a price. Taste. Plan carefully. Meet. Deliver. Rave.
How would you wow the Judges on Masterchef?
Our homemade Dauphinous potatoes.
What is the most innovative dish you have created for a wedding?
Perfect pink lamb for 160 people.
What is the food of love?
Fresh, bountiful and generous helpings.

Tarragon (and lots of herbs).
