Our canapes because they are something a bit different from the usual offerings.
Our catering trailer, it is a great piece of equipment, allowing us flexibility and providing a different approach.
What is your No. 1 wedding planning tip for couples?
Leave the food to the pro's. Its stressfull. Bad food will always leave a bad memory for you and your guests.
What is your favourite personal touch you have seen at a wedding?
Engraved bottle openers was great, something useful to remind people of the day.
Describe your typical process with a couple.
Initially we would consult on types of food and come up with a few ideas, provide a tasting session if appropriate. On the day we will arrive at an agreed upon time. We ask all the questions before hand to make sure we dont disturb you on the day. Afte, we always make sure that everything was up to par and expectation.
How would you wow the judges on Masterchef?
I beleive in the power of colour on a plate. One of my favourite dishes to make is a vegetarian dish of Charred Fennel, Harrisa Roasted Heritage Carrots, Black Lentils, Beetroot Sauce and Sour Cream. Assembled in a stack to highlight the vibrance of each colour and finished with a sprikle of fresh herbs and squeeze of lemon to keep the dish fresh.
What is the food of love?
For me, the food of love is the dish I first cooked for my lovely lady, before we even got together! It was a simple dish of Pan fried Duck breast with Dauphinoise Potatoes, Asapargus and Red Wine and Orange sauce. It was definitely the cooking she fell for.
What is your secret ingredient?
Fresh Herbs. They are so important and sparsely used!
