Not a Wedding actually - but an Apres Ski themed party in a Teepee - in November - guests all dressed in ski gear, vodka luges, artificial snowballs - amazing!

Don't over stress about the tiny details ...

A beautiful flower arch at a marquee Wedding at home - just a stunning way to greet everybody
Describe your typical process with a couple.
We discuss the venue and kitchen facilities available, the length of the Canapé reception and the tone of their day. I then recommend how many Canapés per head for the type and length of reception and ask if the couple would like to choose their menu from my website or if I should recommend a menu. If they would like to try some I offer a tasting session where couple come to me or I go to them and they taste a selection of Canapés to help them choose. We then agree a menu and I take a 20% deposit to save the date.
How would you wow the judges on Masterchef?
Oh - every time - one bite mouthfuls that just taste amazing. I'd give them a Thai Salad Wanton Cup, a Cucumber Hoisin Duck Cup and a Lemon and Lime Meringue Tartlet.
What is the most innovative dish you have created for a wedding?
Not for a Wedding but a Bratwurst in a Curry Wurst ketchup for a party. I like to think that most things can be made in a mini format if you think about it hard enough.
What is the food of love?
Canapés ... sophisticated, a bit decadent and amazing when you discover how good they can be.
What is your secret ingredient?
Attention to detail - and patience - they are pretty fiddly to make!!
